butter is a saturated compound whereas cooking oil is unsaturated compound when you will add red bromine water in butter its colour will not be discharge but if you add that in cooking oil it will become colourless

Baeyer's reagent can also be used, which is alkaline KMnO4, purple in colour, and it decolourises when reacts with an unsaturated compounds, and shows no effect (stays purple) with a saturated compound.
