main reason it is difficult to walk on sand is because the sand grains are unconsolidated(not packet tightly)
so when each step You take you move and grains around

It is difficult to walk on sand because, we know that particles of sand are not so tightly packed and when we walk on it, it compresses and pushes downwards due to our weight!

Another reason, is that friction on sand is very low!
