Saprophytes are a classification of organisms that feed on dead and decomposing matter. Common examples include mushrooms and fungus.

Saprophytes are notorious for how they easily spoil food with minimal contact. This is because they propagate through the air. Spores which contain these saprophytes are discharged through the air where they land on all kinds of surfaces. If they are able to obtain nutrition from the new surface, they breed spontaneously. 

Hence, if a saprophyte lands on a food substance, it grows rapidly, feeding of the food. This is what we commonly see as spoilt or rancid food.
