hydrocolloids: hydrocolloids are water holding substances . certain marine brown algae and red algae produce large amounts of hydrocolloidswhich are used commercially. algin and carrageen are hydrocolloids obtaibed from brown and red algae respectively.Agar(a hydrocolloid) is one of the commercial products obtained from gelidium and gracilaria and are used to grow microbes and in preparations of ice creams and jellies

Definition of hydrocolloid:

Hydrocolloid used for:
● Hydrocolloid dressings are used to treat uninfected wounds. Dressings may be used, under medical supervision, even where aerobic infection is present; the infection should be treated appropriately. The dressing is applied to a cleaned wound. Hydrocolloid patches are sometimes used on the face for acne.

Hydrocolloids in food:
● Hydrocolloids that are commonly used as thickening are starch, xanthan, guar gum, locust bean gum, gum karaya, gum tragacanth, gum Arabic and cellulose derivatives. The gelling type hydrocolloids are alginate, pectin, carrageenan, gelatin, gellan and agar.
