the reason is the process of fermentation, the bacteria lactobacillus in curd ferments glucose to lactose,the byproduct of which is carbon dioxide. fermentation, is an anaerobic reaction this reaction which results in the release of carbon dioxide creates Bubbles in Idli and bhaturas and ferments it

Curd is added to Idlis Bathuras because it contains Lactobacillus bacteria which makes them fluffy and soft...
