The process of fermentation takes place when the bread mixture is heated which in turn causes the gas Carbon Dioxide (CO₂) to come out of the bread. The expansion of the Carbon Dioxide takes place inside of the bread dough which causes it to swell and rise. However, the process takes place very slowly as compared to other processes in which Carbon Dioxide comes out of the mixture like in baking soda.

As the bread dough contains yeast, the fermentation process takes place on coming in contact with the warmth. The gases volume increase on heating and therefore sets the bread.

This is the reason for the rising of the bread during baking.
