The process of digestion begins in the mouth. As you chew you release saliva in your mouth. Your saliva begins to convert starches into sugar as the initial digestion of carbohydrates starts from the mouth using amylase present in the saliva. So the starch in the rice starts converting to sugar as you chew the it. Hence rice tastes sweeter as you chew it.
