This force is called centripetal force and is directed towards the center of the circle.

Newton's first Law requires a force to change the velocity (change in speed and/or direction) of a body in motion.

Without an external force (the string) the person's center of gravity would continue moving in a straight line and thus fall away from the merry-go-round.
