In the case of a blunt knife, the cuttingedge is thicker. As a result, the force of our hand falls over a larger area of theknife, producing lesser pressure. Hence, it is difficult to cut with a blunt knife.

it's difficult to cut with the blunt knife because it's surface area is greater as compared to a sharp knife. and therefore pressure of blunt knife will be less than of a sharp knife. formula to find the pressure is force/area. hence. if the surface area will be less, then pressure will be greater.
for example, take an example of a shoe and a book.
force of both and shoe be 20N and area of shoe be 5cm^2 and book be 10cm^2
therefore pressure of shoe = 20/5 = 4 pascal and pressure of book = 20/10 = 2 pascal
hence, it's proved that if area is less, then pressure will be more.
therefore it's difficult to cut vegetables with a blunt knife because of less pressure.
