It is used basically to test the presence of CO2(carbondioxide) during respiration. If carbondioxide gas is bubbled or pass through lime water than it turns from clear to milky.

This is why lime water is used as a simple respirometer to show the presence of carbondioxide in inhaled and exhaled air..
