Unheated oil when put over pickle it creates a layer over pickle which does not allow air to come in contact that no oxidation will take place and no moisture from air comes in contact with pickle.
When oil is heated five reactions take place that are hydrolysis polymerization peroxidation autoxidation and isomerization. These lead to degradation of oil and thus lead to rancidity type flavour.
