Because it is only able to form monovalent ions. From our basic knowledge in chemistry we know that it has an atomic number of 3 which is equal to the number of electrons in the orbitals of this element. The distribution is 1s2 2s1 which means that the first two electrons (as they are small particles with a negative cloud or charge) of it are extremely attracted to the nucleus or to the protons that carry the positive charge. In the same time the third electron is relatively far away from this attractive force in a farther orbital. This let the outer electron available to be lost during reactions as the Lithium is considered on of the most reactive elements.
