Stainless steel is used in utensils because it is an alloy of two metals which didn't react with heat and water. But steel get corrode when it is heated.

Because iron when exposed to Air starts rusting which if used for cooking can case many harmful disease.. while Stainless Steel is a alloy which donot rust and is safe for cooking food.
