Cellulose is a natural macromolecule. In order to be useful as food, it must be degraded and decomposed into smaller molecules, such as sugars. This process for cellulose is similar to that of starch. Biodegradation reaction of cellulose requires special enzymes (cellulase). Cellulase play an important role on biodegradation of cellulose. Digestion systems of some animals and insects include cellulase, whereas that of human being lacks this critical enzyme. That is the main reason that human being cannot digest cellulose. Cellulase enzymes are naturally produced by some fungi and bacteria.
