Because pot has tiny pores on its surface which allow water to come out while metal container does not have pores. The water then evaporates and takes away the heat on evaporating thus cooling the water.

pot has many pores on its surface which allows the water to pass or evaporate easily die to the fact i.e, evaporation causes cooling the water which evaporate also takes the heat of water by the latent heat of vaporization away and thus makes water cool.
