give reason why ghee freezes at room temperature and mustard oil does not

because the ghee is made up of saturated fat molecules,and mustard oil along with many plant oils are made up of unsaturated fat molecules .saturated fat molecules are always solid at room temperature because at room temperature the molecules are tightly packed together.but unsaturated fat molecules are not so the ghee is solid at room temperature but the mustard oil is not.
