sodium metal is kept under kerosene because it is a vary high reactive element and when it comes in the contact of air it can catch fire so kerosene break the contact of sodium form the air .
nickel and zinc are use for coating iron because they prevent it form rusting it breaks the contact of air and moisture form iron so that it can not get rust.

sodium as we very reactive metal and hence is not easily available in its pure form hence to keep it apart from air : O2 (as it may react and form sodium oxide)
nickel and zinc are used to coat iron as they do not get rusted hence these are coated to prevent rusting of iron
