There is starch present in raw bread.

During the process of mastication, this starch slowly converts into sugar due to our saliva.

Amylase is an enzyme present in our saliva which can convert bread starch into complex sugar substances called as maltose and dextrins.

When we chew bread this starch reacts with amylase present In our saliva to give a sweet taste.
