1)glottis gets covered by a small cartilaginous flap of skin called epiglottis. This prevents the entry of food particles into wind pipe while swallowing.
2)It is said not to speak while eating because, while eating, a flap of cartilage covers wind pipe to prevent the food particles to enter trachea. Talking during eating is bad for stomach due to the fact that some air also goes with food, leading to blocks in food pipe and uneasiness while swallowing.
Hope this answer helps you.
