It is done to protect oil form contamination and rancidity. If the oil would be left in iron container then the acid present in the oil reacts with rust flakes and contaminate the oil. Hence the oil become rancid.

Edible oil is not allowed to stand for a long time in an iron or tin container in order to prevent it from becoming rancid if keep oils in iron or tin container it will get spoilt
