I am not sure of the second one but i can ans the first

In the curry turmeric powder is put which is an indicator.
As the stain is rubbed with soap, which is a base, gets in contact with the tumeric which is there in the curry on the shirt

When bases come in contact with turmeric the colour turns into red.

And as the soap is a base, the colour turns into red.

And as the the soap is rubbed if from the shirt the colur of the curry comes back to its original colour as there is no basic nor acidic solution for the tumeric in the curry to indicate it.

I HOPE IT HELPS YOU
