Three reasons for the shifting of sugar industries from north India to The Western and Southern Indian states are :

»the sucrose content of sugarcane grown is higher in Peninsular India . Thus ,more sugar can be extracted from the same amount of sugarcane.
»The crushing season is longer in Peninsular India, as it does not get very hot in the summer compared to North India.
» Sugar industries are mostly cooperatives and cooperatives are more successful in the Southern states.

As south India has:

A maritime type of climate, that is free from summer loo and winter frost.

It has black soil, the most suitable soil for growing sugarcane.

The factories that use sugarcane for sugar production are located close to the sugarcane fields that reduces loss of sucrose content in sugarcane.
