1. To be precise, it is the protein ‘Albumin’or egg white which gets denatured on heating and all the hydrogen and sulphur bonds get distorted and leads to solidified mass.
2. Methylcellulose, when added to a liquid, will turn gel when heated, and melt when cooled.
