Glass, jars and bottles are dried well in the sun before filling them with pickle. Why?

Because the water present while cleaning the jar small droplets of water remain in the jar. due to water the bacteria grows faster and spoils the pickle

Glass, jars and bottles are dried in sun before filling them with pickle to remove moisture content present in jar and micro-organism.

Explanation:

The food items are easily attacked by bacteria and fungus due to the water content available in them. It is the reason why they are instantly heated before each and every use. If they are left unheated, this will enhance the growth of the micro-organism and may cause the food to get decayed and unfit for consumption.  

In order to protect the pickle form getting spoilt, Glass, jars and bottles are dried well in the sun before filling them with pickle.
