Starch is a polymer of alpha glucose units
It is converted to starch because,
1. Starch is way to store in bulk as it is not a monomer and is a polymer.So it can't occupy more space
2.Starch can't be easily oxidised ,break down by natural disturbances and is osmatically inactive
