HERE IS YOUR ANSWER
Glucose made by the process of photosynthesis may be used in three ways: It can be converted into chemicals required for growth of plant cells such as cellulose. It can be converted into starch, a storage molecule, that can be converted back to glucose when the plant requires it.

Glucose is converted into starch by plants for storage
Starch is a polymer of alpha glucose units
It is converted to starch because,
1. Starch is way to store in bulk as it is not a monomer and is a polymer. So it can't occupy more space
2.Starch can't be easily oxidised ,break down by natural disturbances and is osmatically inactive
