Grapes hanging on a plant do not ferment but after being plucked from the plant can be fermented under what conditions do this grapes ferment is it a chemical or physical change

it's a chemical change -happens due to plant growth hormone like ethylene for ripening

Grapes hanging from the plant do not ferment because they are still alive and their immune system  is still working. When they are plucked from the plant, their immune system stops working and hence,  they ferment. Under anaerobic condition microorganisms like yeast ferments grapes and wine is formed.
