Grapes held on the plant are not ferment but after being pluck they are fermented,What is the condition and the type of change ?​

Because..

~After plucking there Cell get damaged and micro organisms present in atmosphere digest the grapes that's mean they are no more alive.

~ When they are plucked from the plant, their immune system stops working and hence, they ferment.

~ Under anaerobic condition microorganisms like yeast ferments grapes and wine is formed.

~ grapes also get fermented by process of osmosis.
