"These kinds of growth is observed in cut tomatoes because the open surface provides a suitable ecosystem for the growth of the pathogens like Salmonella.

The pH and water activity of tomatoes provide the right nutrient and favorable growing conditions to these pathogens which starts secreting polysaccharide fibres when they grow. This results in the formation of a threadlike structure that we on the cut tomatoes.
