because they carry out the process of transpiration where the guard cells open and throw the water out through stomata openings to create pull force to lift the water from the soil up along wirh nutrients. guard cells closes when they dont need water. hence they are elastic to open and close the stomata whenever needed!....

Elastic ; the stomata gets stretched and expand which thereby helps in the opening of stomata
