It’s not at all hard to prove. In most contexts, it doesn’t even require proof: this is a mere definition of the shorthand symbol 2 to denote the successor of 1, which in turn is the same as the result of adding 1 and 1 (the notion of “adding” natural numbers is often defined inductively, and this is one of the first steps.)

If you mean something you’ve heard about Russell and Whitehead’s “Principia”, which supposedly spends 200 pages to prove this: that’s a false rumor. The proof appears rather late in the book, but not because it took 200 pages to get there. It’s just something they didn’t need to address earlier in the book.

People often treat “1+1=2” as the quintessential mathematical theorem, a profound basic truth on which everything else rests. This, too, is false. It is, once again, a statement that doesn’t carry any depth or interest or utility. It’s just a notation, or at most an identification of one simple symbol with another simple expression.
