ANSWER

Biochemical test of starch is the iodine test. Starch comprises two types of molecules Amylose and Amylopectin. Of these amylose participates in iodine test. In iodine test, iodine gets entangled in amylose and starch turns blue black in colour.

The major sources of starch are cereals like rice, wheat, maize and root vegetables like potatoes. To know the presence of starch in any given sample of food, the iodine test can be performed. In this, iodine solution is used. In this, few drops of iodine solution is added to the food sample. If starch is present in a food item, it will turn blue-black colour. If starch is absent in a food item, it will remain brown in colour.
