The leaves turn yellow because of the formation of AbA that is abscissic acid. It is a growth inhibitor and is formed at the time of leaf fall which is due to environmental and internal factors. Due to AbA formation their is development of an abscission layer at the base of leaves. This layers cut off the vascular transport and the leaves lose chlorophyll, proteins and RNA. This causes senescence in leaves. The leaves turn yellow as they are deprived of water and organic food due to formation of abscission layer and they ultimately fall.
