When a blue litmus paper turns red, what it indicates is that the compound that comes in contact with the litmus paper is acidic. When carbon dioxide, one of the major products of combustion, reacts with water in the moist blue litmus paper, it turns into carbonic acid. Despite being a weak acid, it can be detected by the litmus paper to turn red. The other major product, water vapour, during combustion will not affect the pH of the litmus paper, thus not changing it to be red. It is the carbon dioxide that changes the colour.
