The mouth is the beginning of the digestive tract. In fact, digestion starts here as soon as you take the first bite of a meal. Chewing breaks the food into pieces that are more easily digested, while saliva mixes with food to begin the process  of breaking it down into a form your body can absorb and use.

The small intestine is the site of complete digestion of proteins,carbohydrates and fats.
It receives pancreas from liver. The food coming from the stomach is acidic due to formation of pepsin enzyme. It has to be made alkaline for digestion for the pancreatic enzyme so, that they can react on the fats.
Bile juice from liver accomplish this .Fats are present in the stomach in the form of large globules which makes difficult for enzymes to act on them. Bile salts break down them in smaller globules so that pancreatic enzyme could act upon them.

Mouth
The food we ate is it's in complex nature.It is needed to be absorbed from the alimentary canal,it has to be broken into smaller molecules.
This is done with the help of biological enzymes.
Saliva Contains an enzyme called salivary amylase that breaks down starch which is a complex molecule to give sugar when food is in the mouth.

Role of HCL
HCL produces acidic medium with the help of pepsin enzyme
Mucus helps to prevent damage from the acidic medium without stopping the work of the pepsin enzyme
