baking soda is a basic soda .. it's nature is base .. and milk is acidic nature(lactic acid).. when baking soda is put in milk then nutrilises the acidity of milk.. so that milk can be preserved.....

baking soda or sodium bicarbonate is represented by the formula of NaHCO3 .
as we know that baking soda is mild base.
in milk there is presence of lactic acid when the baking soda is react with lactic acid there is formation of carbon dioxide and water.
when baking soda is react with lactic acid it neutralize the effect of lactic acid and prevent the milk from curding .
so to neutralize the effect of lactic acid which is present in milk there is addition of baking soda .
note :- there is process of effervescent take place in which carbon dioxide is released when baking soda is react with lactic acid.
so in simple way to prevent it from curding there is addition of baking soda in milk .
