There is variety of food in India because different parts of India has different types of soil and landmasses. Rice and lentils need lots of water and grow mostly in places south of India which is near to the coast. Hence, dosa is famous there. Meanwhile, North India is not near to the coast and does not have abundant resource of water. Therefore, dosa did not become famous there.
