Explain why Mercury's surface temperature varies so much from day to night.

Mercury has a thin atmosphere.Also, it is very close to Sun.Due to solar radiation it is very hot during day on Mercury.But as soon as night falls the solar radiation escape to outer space due to negligible atmosphere present on Mercury.As a result,nights on Mercury are very cold.
