this is because their diet is all of grass plants , made of fibre and cellulose hard to digest therefore herbivorous need long intestine

most probably when a carnivore eats non veg the released enzymes by that food generates some energy and also produces some tiny tissues to grow big , whereas herbivores are vegetarians , their only intake depends on plants and vegetables so by eating vegetables also we grow but , there is no matter of something meat or flesh to for new tissues , hence its my guess........
