As we know copper is a very good conductor of heat, and it's also corrosion resistant, hence it's used on the bottom of stainless steel vessel for better heat transfer and durability.

Copper reacts with Carbon Dioxide present in air to form Copper carbonate ( basic in nature ) and forms a green layer and looses it's shine.
Lemon contain citric acid neutralize Copper Carbonate and dissolve the green layer to maintain it's shine ( lustre ).

Sodium is a highly reactive metal and it reacts with Oxygen, Carbon Dioxide and moisture present it air and the reaction is exothermic and can lead to a fire or an explosion, hence it's kept in kerosene as it's doesn't reacts to Kerosene.

First Copper reacts with Oxygen to form Copper Oxide ( CuO ), further CuO reacts with Carbon Dioxide ( CO₂ ) to form a green layer called Copper Carbonate ( CuCO₃ ).
