Milk is not a simple substance like water. It is a uniform suspension of many materials in water. protein, sugar and some facts are some of these materials.When milk is heated slowly, the fat collect on the surface and form a layer, scenes they are lighter than milk.Very soon a thick layer is seen floating on milk. This layer is called cream. This layer is rich in fats.At home, we separately this cream and convert it into butter and ghee. when milk is heated, some of the water in the milk evaporators; that is, it becomes water vapour. If during heating , the milk become covered with the thin layer of cream: the vapour is trapped under it. As the milk is heated for the the water vapour expands and produce bulge in the layer of the cream. Finally the Trap vapour lifts the layer of and in the process brusts through.
