India- The Land Of Flavors And Spices



India has 29 states and 7 union territories. The cuisines in every part of the country have its own distinct characteristics. The diversity in flavors is almost as much as the diversity in the religion and cultural practices over here. Some of the local cuisines in India are described in this article.

Andaman and Nicobar Islands- The easy availability of fishes makes these islands famous for their seafood varieties. Starting from shrimps, jumbo prawns to octopus and starfish, you get to enjoy a variety of sea food here. However, the inhabitants here originally live on a staple diet of raw fish and fruits that is available in abundance.

Delhi- The capital of the country is famous for its Mughal dynasty inspired platter starting from moghlai to succulent kababs. It is also well known for its amazing street food. Chaat, kulfi, paranthas, jalebis and paanipuris, you ask for it and you get it all here.

Maharashtra- This place is the work capital of the country, the people here are always in a rush and the city never sleeps. The attractions include ‘panna’ which is typically a refreshing drink to brave the Mumbai heats. Apart from the famous street side fare of batata vada and vada pav, they also have shrikhand which is a dessert made out of yogurt and comes in many flavors these days. This apart, modak is another famous sweet of this arena. Maharastrians love their food. Being very close to the sea, fish curies are a daily part of their meals . Peanut oil is preferred here. The food is spicy and full of bursting flavors in Maharashtra.

Calcutta– This is the land of ‘rosogollas’ and ‘mishti doi’. Bengalis love their food, and enjoy eating fish, lamb, goat and chicken for lunch with rice, known as ‘bhaat’.  The street food scene is amazing and diverse. Phuchkas to kaathi rolls, one can choose from a wide variety of food items.

Out of 109 spices listed by ISO (International Standards Organization), India produces around 75 spices in its various climatic regions. India is one of the largest producer, consumer and exporter of spices in the world.Indian spices are known the world over for their aroma, texture and taste. India produces about 75 of the 109 varieties of spices listed by the International Organization for Standardization (ISO).

The varying climatic conditions in India provide ample scope for the cultivation of a variety of spices. Almost all Indian states produce spices, with the total area under spice cultivation to be 3.21 million hectares.

Over the years, the Indian spice community has evolved and matured as a technology-based, quality-conscious, customer-centric, market-driven industry. This has led to it commanding a formidable position in world spice trade with significant additions in the manufacture of value added products. Also, great emphasis has been given to organic spice farming.
