Both are wrong neither "the yolk of eggs is white" is correct nor "the yolk of eggs are white" is correct.

The reason it that the yolk of egg is yellow not white.

If it might be white then grammitically it would be the first sentence "the yolk of eggs is white".

This is because the yolk is singular form. And for singular form of word "is" is being used not "are"
