A CCP is a point in a step or procedure at which a control is to be applied to prevent or eliminate a hazard or reduce it to an acceptable level.

CCPs may be located at any point in the food production plant where hazards need to be prevented, eliminated, or reduced to acceptable levels. The identification of CCPs should ensure appropriate control measures that are effectively designed and implemented. In particular, if a hazard has been identified at a step where control is necessary for product safety and no control measure exists at that step, then the product or process should be modified at that step or at an earlier or later stage, toplzzx include a control measure.
