Because a carbon makes 4 bonds in ethane, it requires 4 hybrid orbitals, so one s and three p orbitals combine to give 4 sp3 orbitals.

In ethene, a carbon makes three bonds: 2 with H and one with another C, so it requires 3 orbitals which are the sp2 orbitals formed similarly as sp3 orbitals. So it is sp2 hybridised.

Similarly you can see how carbon is sp hybridised in ethyne.
