ankitsingh63: Saponification is a process that involves conversion of fat or oil into soap and alcohol by the action of heat in the presence of aqueous alkali. Soaps are salts of fatty acids whereas fatty acids are saturated monocarboxylic acids that have long carbon chains e.g. CH₃(CH₂)₁₄COOH.

Esters can be cleaved back into a carboxylic acid and an alcohol byreaction with water and a base. Thereaction is called a saponificationfrom the Latin sapo which means soap. The name comes from the fact that soap used to me made by the ester hydrolysis of fats.

Esters react in the presence of an acid or a base to give back the alcohol and Carboxylic acid. This is called saponification reaction.
