Mistakes are corrected in several ways: firstly, genuine democracies are governed under the rule of law, i.e. no one is above the law and the law applies consistenty and equally to everyone; this means that if a public official is caught stealing money from the government/taxpayers then that official can and will be held legally accountable for their actions; this accountability minimizes corruption.
Secondly, elections are held whereby politicians are held accountable for what they do or do not do while in office, e.g. if a politician is found to be inept or sefl-aggrandizing they might find themselves losing an election against a more capable candidate.
Thirdly, decision making in democracy is consensus based which means public officials must share responsibility when it comes to creating new laws ot policies; this shared approach ensures that the needs of most—rather than the needs of an elite—are met thereby preventing “mistakes” as you observe.
