The problem is that hereditary changes, like faster horses in races, are on a scale and can only go so far, because all the traits are already within that species' genes and are on a normal scale. Abnormal changes - like extra feathers or bigger beak in pigeons or short snouts in bulldogs - lead to degeneration of the animal's health if such animals are bred on. Changes such as enlargement of flowers for garden displays eventually return to the smaller natural size (I have tulips in a bowl which started with large flowers but after many years now have small flowers). Some hereditary changes are the result of abnormalities in the chromosomes and are impairing to the individual.
Species we see today do not alter - in fact they are well-suited to their environments. Elephants will only become extinct if their food disappears; they cannot become better elephants to cope with environmental changes.
