Baking soda decomposes on heating to generate bubbles of CO2 , leaving holes in cakes or pastries and making them light and fluffy.........

baking powder is a mixture of baking soda and edible tartaric acid which releases carbon dioxide on heating and thus makes cakes soft and spongy. 2NaHCO3 +heat → Na2CO3 +H2O +CO2
