The reason why human assets (and I'm assuming by “human assets” you mean “employees”) are not mentioned in the Balance Sheet is because employees are not assets!!! Employees are not Assets - WHAT THEY PRODUCE INSIDE A BUSINESS ARE ASSETS. When employees are paid, the bank account (an Asset) is REDUCED - not increased.
