As every element want to make their octet. In case of hydrogen they make duet. If outermost orbit of carbon has made its octet and hydrogen has gained its duet then they are stable.

Take the example of methane (CH4) :

Carbon has four valence electron and it needs four more.So four hydrogen atom from four side will make covalent bond with them and CH4 will be stable.
